Mornings are always crazy around here. We always have more bags that I have hands, which means lots of trips back and forth to the car. Adding to the craziness lately — trying to leave myself enough time in the morning to pack a lunch! I am the. worst. at taking a lunch to work. I just love getting out of the office for lunch (Also I’m always running late. Also I hate cooking.) We typically have leftovers we want to take for lunch (vs. frozen meals) but storing the leftovers in lunch-box friendly containers is always a pain. IF I succeed at all of the things I mentioned above (packing a lunch, getting it into a container that fits in my lunch box, and remembering to take it to work) then going up to the lunch room and rinsing it out when I’m finished eating is just absolutely the last straw. That never happens… my poor husband. (He does all of our dishes. Thanks, Jason!)
I have said it before, and I’ll say it again, I’m no amazing chef. I enjoy cooking anything fast and easy — it’s rare that I make a big, fancy dinner. With a two-year-old who loves something one day, then hates it the next, I just don’t have it in me to cook anything too crazy. I was excited when Mezzetta asked me to share a recipe using one of their Marinara Sauces because the recipe below immediately came to mind. It’s been a hit with my friends for years! What is it?! Little crescent roll pizzas! They’re super simple and they’re delicious. You only need a few ingredients, and they’re ready in less than 20 minutes… Making them the perfect dinner on a busy week night.
There are three key things to know about me when it comes to the kitchen. 1. I’m the world’s pickiest eater. 2. I’m a vegetarian. 3. I only like grocery shopping for snacks — I am incapable of putting together a list that will result in any actual meals. I thought ordering my groceries online for delivery would help. Not really. Since I’m such a picky vegetarian, I just recently started working with a health coach to make sure I’m not missing key pieces of my diet. Each week she sets two new challenges for me. One related to fitness, and the other to diet. This week’s challenge is to eat at least 3 servings of veggies per day. So, I was very excited to see one of my meal options was HelloFresh’s Jamie’s Mega Mushroom & Lentil Curry. Between the lentils and the tomatoes (I’m going to go ahead and consider them a vegetable, okay?!) this dish is one I’m proud to write down in my food diary! ;)
I am terrible at picking out produce and I usually miss at least one thing on the ingredient list. Meaning my dish either turns out tasting slightly off, or I have to abandon my dinner plans and go with something else. With HelloFresh, I don’t have to worry about any of that! I’m just going to come right out and say it… we LOVE food. Blaire is obsessed with anything she can eat independently. Apple sauce, yogurt and smoothies are some of Blaire’s favorite foods that she can eat by herself. Every morning, before she’s even out of bed, she wants a yogurt pouch.
We realized we were going through a ton of yogurt pouches and were spending a lot (4/$3.99 adds up quickly!). The same goes for apple sauce pouches. Enter: Resqueeze Pouches. They’re squeeze pouches you can use again and again. These pouches are amazing! We buy bulk sizes of the soft foods Blaire loves, and portion them into the pouches. It’s also a life saver for smoothies. We were also putting them in a cup with a straw and if we didn’t rinse it out right away, it was a nightmare to clean. Luckily these pouches are even dishwasher safe (top rack!) and freezer safe. We like the smaller sizes for yogurt and apple sauce, and the larger sizes for smoothies. - 1 Banana
- 1 Cup Blueberries
- 1/2 Cup Strawberries (Optional)
- 1 Cup Ice
- 3/4 Cup Almond Milk
- Combine all items in blender and blend until smooth.
With the beginning of the new year comes my resolution to eat less take out. This means Jason and I are trying out lots of new recipes! Anything simple is our go to (for obvious reasons). We also prefer making a large portion so we have leftovers for lunches. We love pizza. We love cheese. And we love dips. This recipe I’m sharing with you today is all of those things! It’s pizza. It’s a dip. It’s simple. And it makes a huge portion. One of the best things about this dip is it’s easy to customize. You can add whatever your favorite pizza toppings may be (peppers, black olives, pepperoni, sausage, etc.) and you can use less (or more!) sauce or cheese, if that’s what you prefer. Another one of the best things about this dip? I’m sharing the recipe with you just in time for the Big Game! Whether you’re homegating or heading to a huge Big Game party, this dip is sure to be a favorite!
- Your favorite pizza ingredients!
- 1/2 cup Mini Pepperonis
- 1/2 cup Sliced Black Olives
- 1/2 cup Mezzetta Deli-Sliced Golden Green Peperoncini
- 3/4 cup shredded mozzarella cheese
- 3/4 cup shredded Cheddar cheese
- 1 – 8 oz. container cream cheese with chives and onions
- 3/4 cup pizza sauce
- Something to dip! Jason & I love pita chips, but Blaire prefers tortilla chips.
- Preheat over to 350 degrees.
- Prepare meat ingredients. Any meat you’re adding in your dip should be pre cooked.
- Place ingredients (in the list below) into an ungreased pan. Be sure to drain your ingredients well!
- Cream Cheese
- Pizza Sauce
- Pizza ingredients (peppers, meat, black olives, etc.)
- Bake for 12-15 mins, or until cheese is nice and melted.
- Serve with crackers, pita bread, bagel pieces, or even toast!
- You can add whatever your favorite pizza toppings may be (peppers, black olives, pepperoni, sausage, etc.) and you can use less (or more!) sauce or cheese, if that’s what you prefer.
